Super easy (+delicious) sheet pan egg bake

A while ago I tried a recipe for the Starbucks sous vide egg bites and it was DELICIOUS. But is it just me…or is cleaning a muffin tin one of the worst jobs ever?? I wanted to be able to take the same idea but make it even simpler and easier by using a sheet pan, so with the help of chatgpt I set to work and made it happen! (Although it did take some trial and error because the first time chatgpt told me to use FORTY EGGS and I was like uhhh??? NO. lol.)

While it’s true none of my kids were brave enough to try these hahaha I will definitely be making them again because the effort to reward ratio was GREAT, and now I have breakfast for at least the next 3 days! I'm going to keep playing around with this to see if I can also make it with some mix-ins like potatoes/sausage/etc so stay tuned!

The hardest part honestly was boiling water to pour into a casserole dish on the rack below the eggs, but I used one of these badboys for that which made it even easier! (10/10 recommend.)
