My very favorite salad dressing

I’m telling you every time I bring a salad with this dressing in it, people ask for the recipe. EVERY TIME. It’s so good. It doesn’t even matter what’s in the salad because it’s all just a means to drink the dressing. hahah.

That being said, my rule of thumb for best salads?

A hearty green (I like kale and arugula),

A grain (cooked quiona is my fav, but rice will also work! Crispy rice is also fantastic if you plan ahead)

Chicken - the great this about this dressing is that it’s SO FLAVORFUL the chicken doesn’t have to have a ton of flavor. I’ve made salads with canned chicken, rotisserie chicken, crockpot chicken and grilled chicken and they all work great!!

FRUIT - YES, I’m one of the people who is a firm believer in fruit in salads. The ONLY fruit I can think of that’s off limits for this a banana lol everything else i say go for it!! Fruits I personally have tried and loved in this: apples, pears, plums, strawberries, raspberries, pomegranates, oranges, mandarines,

A crunch - some nuts are perfect

optional but also good: feta or bleu cheese, I know bleu cheese is another controversial one, but I love it. Also try goat if you’re looking for something more mild.

ALso this isn’t a requirement, but as a texture person I feel the need to also include the suggestion to chop all of the fruit a similar size and shape with one of these chopper things. I swear it makes it taste better!!!

OKAY NOW TO THE DRESSING….

NOTE: I ALWAYS double it!!! It stays good in the fridge for weeks if you get keep it around that long ;)
